Honey-Glazed Applesauce Muffins

Another recipe my kids love from the book Baking Basics and Beyond by Pat Sinclair -

1 1/2 cups of all purpose flour
3 teaspoons baking powder
2 teaspoons pumpkin pie spice
1/2 teaspoon of salt
1 cup applesauce
1/3 cup veggie oil
1/2 cup honey
1 egg beaten

Honey Glaze
1/4 butter melted
1/4 cup honey

Heat oven to 400 with rack in middle. Oil or spray a muffin tray. The recipe should make 12.

Combine the flour, baking powder, pumpkin pie spice, and salt in a bowl. In another bowl combine the oil, honey, applesauce, and egg.
Mix the applesauce mixture into the flour mixture until flour is moistened. They should bake anywhere btwn 18 and 23 minutes until lightly browned (or do the toothpick trick)

Heat the butter and honey. When butter is melted pour or brush mixture over the muffins.
