I make this all the time - my kids really like it
1 cup low sodium chicken broth
2 tablespoons cornstarch
2 tablespoons reduced sodium soy sauce
2 teaspoons sugar
1 teaspoon peanut oil
4 scallions thinly sliced
small bit of chopped ginger root
1 garlic clove minced
2 celery stocks thinly sliced
1/2 red bell pepper diced
1 cup bean sprouts
pkg of cooked sliced skinless chicken breast
chow mein noodles
Whisk the broth, cornstarch, soy sauce and sugar.
In a wok or reg. fry pan heat peanut oil. Add scallions, ginger, garlic cook until scallions are softened.
Add celery and pepper cook until softened.
Stir in bean sprouts, add the cooked chicken and broth mixture. Stir until sauce thickens.
Put the chicken mixture on top of the chow mein noodles - serve with rice and fortune cookies.
